The Pike Place Market claims to be the oldest continually operating farmers' market in the United States. Through the years, Jewish merchants have played an important role in it, notably serving as some of its initial vendors. These Sephardic pioneers mostly came from Turkey and Greece, and upon arriving in Seattle, quickly set up bakeries and restaurants, as well as shops where they sold produce, fish, and most surprisingly, oysters.
